Gideon’s Bakehouse’s November cookie, Crisp & Crumble, is an apple cookie with a brown butter oat crumble. Here’s what’s new at the Disney Springs shop this month, and what we still don’t know.
Gideon’s Bakehouse has a new cookie of the month, and the bakery says this one has been cooking for a while. Like, four years.
The November cookie is called Crisp & Crumble. It’s on the menu at the bakery, which has a shop at Disney Springs at Walt Disney World, for the whole month. Gideon’s own menu page puts it simply: “Available throughout November!”
Apple season is officially open.
Here’s a recent Disney Springs visit with Gideon’s cookies from Paging Mr. Morrow:
What is Gideon’s Crisp & Crumble cookie?
Per MickeyBlog, which wrote up the November lineup on Sunday, Nov. 1, it’s a nearly half-pound cookie. It’s made with apples, toasted sugar and fall spices. The top gets a brown butter oat crumble and a vanilla glaze.
So think apple crisp, but in cookie form and close to half a pound. Gideon’s cookies have always been huge, and this one keeps the tradition.
MickeyBlog reports that Gideon’s says the flavor took four years to develop. We couldn’t find the bakery’s original post saying so, so take the number as Gideon’s claim.
Neither MickeyBlog nor Gideon’s menu lists a price. Plan to find out at the counter.
What else is new at Gideon’s in November?
Crisp & Crumble isn’t alone. MickeyBlog lists a few other November items:
Chocolate Churro Stuffed Sugar Cookie: a chocolate cookie with cinnamon, cayenne and ancho chili, stuffed with dulce de leche and rolled in cinnamon sugar. It’s for Dia de los Muertos and is sold Nov. 1 and 2 only. That means today and tomorrow.
Apple Spice Cake: this one’s back, with apple caramel buttercream, apple pie filling and an oat crumb topping. Slices are sold Wednesdays and Saturdays through Thanksgiving.
Pipistrello’s Mocha Cinnamon Cold Brew: a coffee drink at Disney Springs through Thanksgiving.
One thing to know before you go. Gideon’s own weekly cake list still shows a “Dutch Apple Pie Cake” on Wednesdays and Saturdays. That may be the same cake under an older name, or the page may not be updated yet. Ask at the shop.
What Gideon’s merch is new this month?
The November menu brings a new character named Samuel Scarecrow.
MickeyBlog lists these new merch items:
Apple Crumb Cake Candle
Morsels Pin
Canvas Sticker
Jose Calacas Day of the Dead Mini Print, limited to 250 signed pieces
That last one is a small run. If you collect Gideon’s art, it likely won’t last long. No merch prices were listed.
How do you get into Gideon’s at Disney Springs?
Gideon’s lists its Disney Springs hours as 10 a.m. to 11 p.m. Sunday through Thursday and 10 a.m. to 11:30 p.m. Friday and Saturday. It says the shop is open 365 days a year.
The line is the famous part. Over the years, the Disney Springs shop has used a virtual queue to handle crowds on busy days. Check the shop’s signs or the Gideon’s site when you arrive, since the setup can change.
There’s a per-person limit on cookies without a preorder. Gideon’s own site says seven in one spot and six in another, so expect a cap of around six or seven.
Preorders are only offered at the original shop, not at Disney Springs.
Are there cookies you can only get at Disney Springs?
Yes. Gideon’s says its Coffee Cake cookie is sold at Disney Springs every morning until it sells out. A “Dark Coffee Cake” shows up every evening at sunset.
Cake slices are first come, first served, with two per person per flavor, per Gideon’s.
Where did Gideon’s Bakehouse come from?
Gideon’s is the creation of Steve Lewis. The bakery opened its “first physical shop” at East End Market in Orlando in October 2016, according to its website.
WDWMagic reported that it started there with one employee and an $800 budget. Those half-pound cookies did the rest.
Gideon’s announced its Disney Springs location in June 2020, and the shop opened that December. It quickly became one of the best-known lines at Disney Springs, which says a lot for a place that sells cookies.
October marked the bakery’s 10th anniversary. WDWMagic reported that the October menu brought back Frankenstein cookies to celebrate.
Is the original Gideon’s still open in Orlando?
It is. The East End Market shop is at 3201 Corrine Dr. in Orlando and is open 10 a.m. to 7 p.m. daily, closed on major holidays, per Gideon’s.
If you’re local, that’s your apple cookie backup plan, and the only place to preorder.
